We are starting to get low on groceries so I decided to put together some things I had here and try to be creative. This is what I did:

First: I put a pot of water on to boil to cook some penne pasta.

Don't be fooled because the ingredients are all canned. I was very surprised by how good this was! Even my little guys wanted more.

1 package boneless chicken breasts (I used the thin sliced kind)

Does anyone use this?? I picked up the cookbook yesterday because once Evan starts eating what we eat I'll want something that helps me organize for meals. It gives you 5 meals a week....with grocery lists. they are healthy, quick, and supposedly kid friendly (I'll have to see about that once our 'tester' is old enough)

We really love enchiladas at our house but when I make them, the corn tortillas always break after I roll them and put them in the pan. I've tried warming them, sticking a toothpick in, and using different brands but nothing has made a difference. Does anyone have any suggestions? TIA!

I can't tell you the exact amounts but I do know it ends up to be a light orange color when its finished.

All you need is a small can of crab meat or you can use chicken ground up from a food processor,
buffalo sauce (I prefer texas pete kind) but you can also use just regular hot sauce too,
and whipped cream cheese (I used almost the whole tub) and mix together very well and chill.
It's very good served over toasted bread.

2 cups cooked rice

2 cups (8 ounces) shredded Monterey Jack cheese
